Having a nice dinner at home doesn’t mean that you have to spend all day slaying away, chopping and buying stuff to eat. Ingredients:
Enchilada Sauce ( you either can buy it pre-made or make it at home yourself)
Boneless skinless chicken breasts
Chopped corn tortillas (soft, not chips)
Shredded cheese (in preference, cheddar)
Olives (Optional)
Coriander (Optional)
Sliced Onions (Optional)
How To Make It
1.Add the chicken breasts to the slow cooker. You could either add some water and expect it to boil while the chicken becomes more tender, or you could start off by adding the enchilada sauce already.
2. Wait for the chicken and the sauce to mix, and for the entire mix to boil. This way the chicken will become tender and you could use a fork to crumble it, so that it ends up in shreds.
3.Shred the entire chicken until the breasts are no longer whole.
4.Now add the soft corn tortillas. Make sure that they are cut in strips, however you shouldn’t be adding chips, because they will become soggy after a while.
5.Add the rest of the ingredients, and mix them together (half of the cheese, some olives, coriander, onions). Make sure that they all blend in with the chicken.
6.Cook on low for 40-60 minutes and then add the same ingredients at the top, and have them sit together. This way in every bite you will get a lot of flavors.
Don’t spend a lot of time preparing something, just make sure you use your slow cooker to speed up the process. Making yourself a snack or a meal should be quick and easy to do!
